  1. Be Prepared/Have a Plan. Making a change in your life takes thought, consideration and a plan for how you will achieve and execute your plan. It’s also important to start slow and to be realistic about what you want to accomplish.
  2. Set Goals. Accomplishing something is always easier when you set realistic, achievable goals. Setting goals is also a great way to mark milestones and accomplishments along your resolution journey.
  3. Don’t Over Commit. It can be easy to want to set a whole bunch of resolutions when you’re excited and motivated. However, you may quickly find yourself discouraged and overwhelmed. Be realistic with yourself about what is reasonable. You can always add additional resolutions later!
  4. Write Your Goals Down in a Visible Place. Writing your goals down is powerful in and of itself. Having your goals written down and somewhere you see at least once a day is even better!
  5. Be Accountable. Sharing your resolutions with is others and asking for accountability in sticking to your resolutions can be a great motivator. It also gives you a person or people who can encourage you if and when times get tough!
  6. Set Reminders. You can set automated reminders in your calendar, encouragement “reminders” to help keep you motivated, and more. It can also help you plan ahead and stay on track. For example, if your resolution is to exercise more, making a plan each week and scheduling workouts in advance in your calendar can help keep you on track.
  7. Cut Yourself Some Slack. It’s a good idea to evaluate your resolution and plan for achieving it regularly and make adjustments if necessary. It’s also important not to beat yourself up if you slip up. The best way to get back on track is to do so quickly.

9 Holiday Travel Tips

With the Holiday’s in full swing, it’s no surprise many of us are busy with extra activities and festivities. Many of us are also gearing up for some Holiday travel. Whether traveling by car, plane or another method, traveling can be stressful, especially around the Holidays with the increase in people traveling. We’ve included some great tips to hopefully make your Holiday travels a little less stressful and more enjoyable! Bon voyage!

  • This one may seem obvious, but planning ahead and researching ahead of time can save a lot of time, hassle and money. If driving, it can be helpful to map out several routes based on traffic, travel times and more in case you run into something unexpected. When flying, check into potential baggage fees, parking costs, and more to avoid unexpected costs and surprises.


  • Traveling by plane? Consider downloading your airline’s app for paperless boarding, up to the minute gate and flight information, in-flight entertainment and more. You can also download the app GateGuru to see approximate security line time estimates. If traveling by car, GasBuddy is a great app to help you find the cheapest gas and SitorSquat is a great app for finding the cleanest bathrooms.


  • If you can avoid checking luggage, it can end up saving a lot of hassle. Luggage gets lost, especially this time of year. Many airlines also allow a free checked bag plus a personal item so avoiding checking your luggage can also save you a lot of money!


  • Let’s face it. Traveling can be loud. Whether it’s in the airport, on the plane or in the car, sometimes you just need some peace and quiet. Headphones or earplugs can be a great way to zone out and listen to music. Have noise-cancelling headphones? Even better!


  • A big mistake when traveling is forgetting to eat and pack snacks. Traveling can be stressful enough, and you don’t want to add a group of hungry and tired travelers to that mix! Having a hearty meal before heading on your way and packing snacks can keep everyone from getting hangry, and that means a more pleasant trip!


  • Bringing a bunch of gifts when flying can be such a hassle. You’ll likely have to pay to check the gifts anyway, and TSA can unwrap your gifts during the screening process. You can save yourself a lot of hassle by wrapping and shipping your gifts before you travel. Or if you really want to make gift giving hassle free, consider buying gift cards!


  • It may not be ideal, but traveling on the Holiday itself can save you money and is way less stressful because the airport is a lot less busy. Also choosing the earliest possible flight often means less security lines, greater on-time performance and a better chance of getting rebooked the same day in the event of a delay or cancellation. Same goes for car travel. Consider traveling on the holiday itself or choosing less popular times (like driving early in the morning or overnight).


  • When flying, carefully look at the times in between flights if you have a connection. It can be very stressful to have a connecting flight in an unfamiliar airport, especially if you have a very small time window. When driving, take care to research the weather conditions and plan accordingly if traveling somewhere with or the potential for snow. It’s always smart to have proper gear in the car in the event of a flat tire or car trouble.

3 Yummy Holiday Casseroles

With the Holidays here, it seems to be the time of year when we host family and friends more often. With the often cooler weather and the challenge of feeding a crowd, casseroles can be a festive and delicious option! We have included recipes for three yummy options to try.



  • 3 pounds of broccoli, cut into small florets
  • 3 T olive oil
  • 2 leeks, halved and thinly sliced
  • Salt
  • ¼ cup all-purpose flour
  • 6 ounces (2 cups) shredded sharp cheddar cheese
  • 3 cups whole milk
  • ¼ t cayenne pepper
  • Freshly ground black pepper
  • ½ cup crushed saltine crackers
  • ½ cup sliced almonds
  • 4 T melted butter


  1. Preheat the oven to 400 degrees. Take a large, deep pot and place a steamer basket inside. Add 1-2 inches of water and place the broccoli inside. Cover the pot. Cook on high heat until the broccoli is crisp but slightly tender, about 4-5 minutes. Transfer the broccoli to paper towels to drain and rest.
  2. In a medium pan, heat the olive oil. Add the leeks and season generously with salt. Cook on medium-high until soft, about 10 minutes. Add the flour and whisk until mixture is bubbly and a paste forms, about 2 minutes. Add the milk and whish constantly, until thickened and bubbly, about 5 minutes. Remove from heat and whisk in the cheddar cheese and cayenne pepper, and season with salt and fresh ground black pepper.
  3. Take a large, 2-inch deep baking dish and pour half of the cheese sauce into it and arrange evenly. Place the drained broccoli on top of the cheese sauce evenly across the dish and drizzle the remaining cheese sauce on top. In a small bowl, mix the almonds, crackers and butter and sprinkle mixture over the top of the casserole. Bake the casserole for 15 minutes, or until the sauce is bubbly and the top is golden brown.




  • 2 T butter
  • 1 T vegetable oil
  • 1 small onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 celery bib, finely chopped
  • ¼ cup flour
  • 1 ½ cups milk
  • Salt, freshly ground pepper and Tabasco
  • ½ cup mayonnaise
  • 4 cups shredded rotisserie chicken
  • ½ cup finely chopped pimentos
  • 1 sleeve of Ritz crackers, crushed


  1. Preheat the oven to 350 degrees. In a large pan, melt the butter and add the oil. Add the onion, bell pepper, and celery and cook until softened, about 5-6 minutes. Add the flour and cook, stirring constantly, for 2 minutes. Add the milk and whisk until mixture is well combined. Reduce the heat and simmer until thickened for about 2-3 minutes. Season with salt, pepper and Tabasco. Remove from heat and stir in the mayonnaise, chicken and pimentos.
  2. Transfer the mixture into a large baking dish. Spread the crushed Ritz crackers on top. Bake for about 45 minutes, until bubbling and the top is golden brown. Let the casserole rest for 15 minutes before serving.
  3. As a twist, you can add shredded cheddar cheese to the top of the casserole before adding the crackers!

  • ½ pound shiitake mushrooms, caps only, cut into ¾ inch pieces
  • 1 medium onion, minced
  • 1 red bell pepper, cut into ½ inch pieces
  • 2 t salt, and more for seasoning
  • 8 large eggs
  • 3 cups whole milk
  • 1 T Dijon mustard
  • 1 T soy sauce
  • ½ t pepper
  • ¾ pound day-old challah bread, sliced into 1 inch by 1 inch squares (10 cups)
  • 6 ounces black forest ham, finely diced
  • 1 cup shredded Monterrey Jack cheese
  • 1 cup shredded cheddar cheese
  • ½ cup finely chopped scallions (plus more for garnish)
  • Hot sauce, for serving


  1. Butter a 9×13 inch baking dish. Take a large skillet and heat the olive oil. Add the pepperoni and cook over medium heat until the fat is rendered, about 3 minutes. Add the mushrooms and cook until lightly brown and tender, about 5 minutes. Add the onion, bell pepper and large pinch of salt and cook, stirring occasionally. Cook until softened and browned, about 6-7 minutes. Let the mixture cool completely.
  2. Take a large bowl and beat the eggs with the milk, mustard, soy sauce pepper and 2 t of salt. Add the cooled vegetable mixture, challah bread, ham, both cheeses and the chopped scallions and mix well. Place the mixture into the buttered baking dish. Cover in plastic wrap and refrigerate overnight.
  3. Preheat the oven to 350 degrees. Uncover the casserole and make for about 50 minutes, until the casserole is set and the top is browned. Let stand for 10 minutes, and then top with more scallions if desired. Serve with hot sauce.
